If you are into small production hand crafted wines, be sure to check out Bryter. Their Lux Chardonnay has a tangy rich ripe flavor with a creamy texture because they didn’t add any yeast. The winemaker used what’s known as “wild” yeast, which is just a cool term that means the grapes have enough yeast on them to start fermentation naturally. Wild takes time, though. Fermentation took 6 months instead of a matter of days with added yeast. But it’s worth it. Not only does this wine tell a story, it’s a great pairing for both rich creamy foods as well as tangy light bites.
